A day of Beans and Rice

Breakfast started out nice and simply: A banana, 1/2 or a frozen peach, 1/2 c yogurt, and some cinnamon. Smoothie Heaven.

Rather than cook a million meals today, we decided to make a huge pot of spanish beans and rice to last us through the day. This had onion, garlic, tomato, cheese, cilantro, spices, and the basics.

For a snack I had a homemade english muffin with spiced peach butter.

Dinner was another serving of Beans and Rice - with the addition of two sliced olives on top!

Desert was a small handful of chocolate chips - a little less than 1/4 of a cup. Eating them one by one while watching a show made my sugar craving go right out the window. Awesome!

All in all it was a pretty carb-heavy day, but it was nice to not cook very much. At one point I also had 1/2 of a small apple - another 49 calories to the list. Nutritional Content for the day comes out to:

These figures for caloric intake don't seem quite right to me, perhaps I did not get the measurements correct for the beans and rice. In either case, we got our vitamins in (woo hoo! our track record is bad for that...) and I didn't have to cook all that much. Hopefully I will be able to get some more greens in next time.
